GASTRONOMY
The cuisine of the province of Brindisi is characterized by great variety of local agricultural products, huge quantities of fresh fish from the coast and the traditional and flourishing stock-farming.
Therefore plenty of fresh fish and meat, but also extra-virgin olive-oil, pasta, tomatoes, artichokes, egg-plants, vegetables, grapes and wine, all very tasteful products, thanks to the sunny climate, which have been ruling our cuisine over centuries and have now been discovered by physicians and dieticians all over the world as determining elements in a healthy and balanced diet.
Typical dishes are “orecchiette” (little round pasta) with broccoli, “incapriata” (mashed) broad beans with chicory.
